A quick, easy and super yummy dish for your little one. My son definitely takes after me with the sweet tooth! He had his first taste of chocolate on Easter day and chomped the little bunny's ears clean off. His diet doesn't usually include sugar, unless for a very rare treat but he definitely shoes preference to the naturally sweet foods such as fruits and yoghurts. I had some bananas which were going a bit too ripe so decided to make him a yummy french toast for his lunch. It was a huge win! he couldn't get it in his mouth fast enough and didn't leave any behind!
INGREDIENTS:
1 very ripe banana
1 egg
1/2 tsp cinnamon
2 slices bread of your choice (I used multigrain as that's what i had on hand)
3 tbp milk of your choice (I used Lactose Free whole milk)
1 tsp butter or margarine (I used Dairy Free spread)
METHOD:
Mash Banana with a fork
Whisk egg and add to banana
Stir in milk and cinnamon
Cut bread into slices and dip into egg and banana mixture
Melt butter on a pan and add bread slices
Fry bread until golden on each side
NB: I have cut some of my slices into smaller pieces to encourage the use of a fork. My little one is still a bit young but did do a very good job at using the fork for the first time. To help encourage him, I offered strips for him to hold and continued to place pieces on the fork and place it on the plate for him to grab and feed himself.
