Easy Squeezy Lemon Balls

With spring in the air, the citrus fruit is in full bloom! We have a bunch of lemons from my Nonno‘s (grandfathers) tree so I decided to experiment and make some lemon energy balls.


These are super easy to make and so yummy. The lemon adds a slight sour flavour so they are a nice change from some of the sweeter energy balls.




INGREDIENTS:

  • Juice of 1 Small Lemon

  • 1/3 Cup Pitted Dates

  • 1 Cup Oats

  • 2 tbs Honey

  • 1/4 Cup Coconit (shredded or desiccated )

  • Extra desiccated coconut for rolling


METHOD:

  1. Place dates and lemon juice in food processor and blitz until dates are processed

  2. add oats and coconut and blitz together until mix starts to come together

  3. add honey and blitz until combined (the honey adds a hint of sweetness and breaks up that sour lemon taste. If you want your balls to have more of a ‘tang’ you don’t have to add the honey, instead add a little water if required to get the desired consistency. You will know you have the correct consistency when the balls roll together easily and don‘t crumble)

  4. Roll balls into desired size and coat in desiccated coconut


TIP: I always wet my hands before rolling balls as it helps to stop it sticking and form a perfect ball.


Such a yummy and refreshing take on the favourite ‘energy balls’
