My current go to for a quick and easy dinner. This dish takes around 20 minutes from start to finish and is packed with so much goodness. Couscous is one of little mans favourites at the moment but you could easily make this dish using pasta or rice if you prefer.
INGREDIENTS:
1 cup butternut pumpkin
1 small onion
1 large carrot
handful of fresh spinach and kale
1/4 of a chicken breast
paprika
garlic salt
1 tbsp salt reduced chicken stock
1/2 cup pearl couscous
olive oil
METHOD:
Finely dice onion and brown in olive oil
Chop chicken into pieces and brown in pan with some paprika and garlic powder (you can use any flavouring you like)
Dice carrot and pumpkin and add to olive oil and chicken
Prepare couscous as per package instructions
Whilst couscous is cooking continue preparing vegetables and chicken
Finely chop spinach and kale and add to mix
Soften vegetables and cook chicken. I do this by placing the lid on the pot and lowering the heat to medium. You can add a little water if needed.
Once vegetables and chicken are well cooked remove chicken from mix and finely chop
You can mash your vegetables a little or leave them as is
Add mix to prepared couscous and enjoy!
