Recipe from One Handed Cooks
My little man loves to snack and is a huge fan of energy balls made with dates so when I saw this recipe I knew it would be a hit. This recipe came from One Handed Cooks and I've just very slightly modified it to make it dairy free.
INGREDIENTS:
1 Cup Pitted Dates
1/4 Cup Rolled Oats
3 tbsp Plain Flour
1/2 Cup Shredded Coconut
1 tsp Baking Powder
1 tsp Vanilla Extract
1/2 Ripe Banana
1 tbsp Vegetable Oil
1/4 Cup Milk (I used oat milk)
METHOD:
Preheat oven to 180 degrees and line a baking tray with grease proof paper
Place all ingredients into a food processor except the milk and blitz until well combined.
Transfer to a bowl and mix in milk until a soft batter forms
Roll into balls and place onto baking tray, flattening slightly
Bake for 10-15 minutes then transfer to wire rack to cool
Cookies can be stored in the fridge for 3 days or frozen for up to 3 months
