Coconut and Date Cookies

Recipe from One Handed Cooks


My little man loves to snack and is a huge fan of energy balls made with dates so when I saw this recipe I knew it would be a hit. This recipe came from One Handed Cooks and I've just very slightly modified it to make it dairy free.




INGREDIENTS:

  • 1 Cup Pitted Dates

  • 1/4 Cup Rolled Oats

  • 3 tbsp Plain Flour

  • 1/2 Cup Shredded Coconut

  • 1 tsp Baking Powder

  • 1 tsp Vanilla Extract

  • 1/2 Ripe Banana

  • 1 tbsp Vegetable Oil

  • 1/4 Cup Milk (I used oat milk)

METHOD:

  1. Preheat oven to 180 degrees and line a baking tray with grease proof paper

  2. Place all ingredients into a food processor except the milk and blitz until well combined.

  3. Transfer to a bowl and mix in milk until a soft batter forms

  4. Roll into balls and place onto baking tray, flattening slightly

  5. Bake for 10-15 minutes then transfer to wire rack to cool

Cookies can be stored in the fridge for 3 days or frozen for up to 3 months
