DAIRY FREE & SUGAR FREE BANANA BREAD

Banana's - the fruit that gives you 1 hour, 3 minutes and 24 seconds of 'perfection' before it becomes too ripe. No one likes an under ripe or over ripe banana! and if you miss that small window of opportunity your sad banana's sit in the fruit bowl watching the other fruit get picked over them and it's only a matter of time before those yellow beauties turn a lovely shade of brown. but never fear, these bananas are the important ones, because these are the ones that go on to bigger and better things.... BANANA BREAD :D


This amazing recipe is not only delicious but is also completely DAIRY FREE & SUGAR FREE! So a happy recipe for all those little tummy's and of course the big ones too ;)



INGREDIENTS:

  • 2 cups plain flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 2 eggs

  • 2 teaspoons vanilla extract

  • 1/2 cup vegetable oil

  • 1 teaspoon cinnamon

  • 4 ripe bananas


METHOD:

  1. Pre-heat oven to 180 degrees and prepare loaf pan.

  2. In a bowl, combine the flour, cinnamon, baking soda and baking powder.

  3. Add in eggs, vanilla and vegetable oil.

  4. In a separate bowl, mash banana and add to other ingredients.

  5. Combine all ingredients and transfer to prepared loaf pan.

  6. Bake for 40-50 minutes or until cake springs back when touched in the center.

  7. Remove cake from oven and allow to cool slightly.

  8. Once slightly cooled, transfer to wire rack and cool completely before cutting into slices

  9. Store in airtight container and enjoy! Best consumed within 3-5 days.


NB: If your bananas are browning and you don't have time to use them for delicious recipes, peel and freeze them in a container. This way you always have some handy when baking time comes around. I used 3x frozen banana's for this recipe as I only had 1 over ripe fresh banana.


If you wanted to add sugar for a sweeter taste I would recommend 1/2-1 cup but it is surprisingly delicious without!
