Date and Carrot Energy Balls

These carrot and date balls are a great way of sneaking in some extra veggies! They are super soft so are great to offer if your little one is just starting out with finger foods.



INGREDIENTS:

  • 3 Medium Carrots, Grated

  • 1 Cup Rolled Oats

  • 1/2 Cup Dates

  • 1 tbs Vegetable Oil

  • 1 tsp Ground Cinnamon

  • Roughly 1/4 Cup Desiccated Coconut for Rolling

METHOD:

  1. Grate Carrot and place in bowl.

  2. Add carrots, oats, dates, oil and cinnamon in food processor and blitz until combined.

  3. Roll mixture into balls and then roll in coconut to coat.

Carrot and Date balls can be stored in the fridge for 5 days or can be frozen for 3 months.
