Let me start by adding that these muffins are GLUTEN FREE, EGG FREE, DAIRY FREE and SUGAR FREE! Oh and did i mention that they're absolutely delicious? because they totally are :D
(Recipe for this one was inspired by Sally's baking addiction)
Recipe makes approximately 24 mini muffins
INGREDIENTS:
1 and 1/4 cups rolled oats
1 large ripe banana
1/3 cup of apple puree'
1 and 1/2 tbsp vegetable oil
2 tsbp water
1 tsp cinnamon
1/2 tsp baking soda
1 tsp baking powder
3/4 cup fresh or dried fruit of your choice, chopped. I used fresh apple and strawberries
METHOD:
Preheat oven to 180 degrees celcius
Grease mini muffin tray
Place all ingredients into food processor (except your 3/4 cup of dried/fresh fruit) and blend until combined
Stir in your dried/fresh fruit
divide batter evenly between muffin tray.
bake for 10-15 minutes or until golden.
Refrigerate and consume within 3 days. Muffins can also be frozen for up to 3 months.
