This one was inspired by a recipe my mother-in-law taught me to make a very simple old school soup or as we call it 'brodo'. A slow cooked veggie and chicken mix which can be used at many different stages of solids as you can very easily adjust the consitency.
INGREDIENTS:
6 baby potatoes or 3 large potatoes
1/4 zucchini (peeled)
1 carrot
1 onion
1 piece celery
1/2 chicken breast
3-4 cauliflower florets
1/2 tomato
salt reduced chicken stock powder
1/2 tsp cinnamon
METHOD:
Wash and peel all vegetables
chop vegetables into large chunks and place in pot
chop chicken and add pieces into pot
add water to just cover vegetables and chicken
add stock powder and cinnamon
bring to boil and then reduce heat and cover
allow vegetables and chicken to slowly cook (mine cooked on low for 4-5 hours)
once cooked, remove chicken from mix and shred with a fork.
remove carrot, potato, zucchini and tomato and softly mash with a fork
add to shredded chicken.
Mix in as much of the liquid as you like to achieve desired consistency.
Discard onion and celery. If you like, these can also be mashed and added.
NB: allowing the mix to slow cook allows for the flavours to develop. As I do not add salt to any of the dishes I cook for my baby I like to find alternative ways to increase flavour. This dish does not need to slow cook but it definitely has more flavour when it does.
You can also use this recipe to make a puree. Simply add all ingredients and liquid to a blender once cooked and blend until smooth.
