I'm always looking for ways to add extra veg into meals. My little man is definitely showing signs of being a fussy toddler! and getting him to eat vegetables can be a little bit of a challenge... some days. A winner for us has always been pasta and meatballs so I decided to change up my usual recipe and try add in some extra vegetables! The meatballs turned out so well and actually didn't taste that different to my normal meatball recipe. Perfect for the whole family!
SAUCE:
INGREDIENTS:
1 Onion
1 Bottle Tomato Passata
1 Can tomatoes
Salt
Peper
Fresh Basil
Olive Oil
METHOD:
Finely chop onion and brown in olive oil
Add can tomato and cook for approximately 5 minutes
Add passata, salt, pepper and basil
Simmer sauce on medium heat while preparing meatballs
MEATBALLS
INGREDIENTS:
500g Veal and Pork Mince
250g Beef mince
1/2 Medium Zucchini
1 Large Carrot
2 Large Cauliflower Florets
3 Cloves Garlic
1 Medium Potato
Handful Fresh Parsley
Inside of 1 Bread Roll (older bread work better than fresh)
Salt & Pepper
METHOD:
Place mince in a bowl
Finely grate zucchini, potato, cauliflower and carrot
Squeeze out all excess liquid from vegetables and place in bowl with mince
Crush and add garlic
Finely chop parsley and add to mince and vegetables
Crumb bread to a fine consistency and add to mix
Add salt and pepper
Roll mixture into balls of desired size and place them into sauce
Cover and cook on low heat for at least 3 hours
