Potato Gems

These oven baked potato and sweet potato gems are a yummy option for the whole family. They are a great first finger food as they're quite soft and can be made into any shape you like.



INGREDIENTS:

  • 1 Medium Sweet Potato

  • 4 Small White Potatoes

  • Handful of Peas (fresh or frozen)

  • 1/4 cup plain flour

  • 1 tsp Salt Reduced Chicken Stock

  • 1 tsp fresh chives

  • Breadcrumbs

  • 1 Egg, beaten (if you require recipe to be egg free, use milk instead. I use almond milk)

METHOD:

  1. Peel and wash potatoes and sweet potatoes

  2. Chop and place potatoes and peas into a steamer (alternatively you can boil potatoes if you don't have a steamer just make sure they are drained very well)

  3. Steam vegetables until soft

  4. Add stock and mash until smooth

  5. Add chives and flour

  6. Roll mix into balls (I find it easier to roll with wet hands to stop the mix from sticking)

  7. Coat in egg (or milk) and crumbs and place onto baking tray

  8. Bake in oven at 180 degrees for approximately 20 minutes or until crumbs become golden.


Potato gems can be stored in an airtight container in the fridge for up to 3 days or frozen for 3 months.
