Potato, Pea and Corn Patties

I had some let over boiled potatoes and corn on the cob from last nights dinner for hubby and I so I decided to give some potato patties a go for little mans lunch. They were super simple and such a good way to use up our leftovers :)



INGREDIENTS:

  • Potatoes - 4 large or 6 small

  • 1/2 corn on the cob (alternatively you can use tinned corn. approximately 3 tbsp)

  • 3 tbsp peas (I used frozen, lightly defrosted)

  • a handful of chives, finely chopped

  • 1 and a half tbsp natural yoghurt

METHOD:

  1. Peel and boil potatoes, allow to cool and mash

  2. add corn and peas and mash slightly

  3. add chives and yoghurt and mix together until combined

  4. Place spoonfuls onto a baking tray and bake at 180 degrees for approximately 15 minutes or until golden.
