I had some let over boiled potatoes and corn on the cob from last nights dinner for hubby and I so I decided to give some potato patties a go for little mans lunch. They were super simple and such a good way to use up our leftovers :)
INGREDIENTS:
Potatoes - 4 large or 6 small
1/2 corn on the cob (alternatively you can use tinned corn. approximately 3 tbsp)
3 tbsp peas (I used frozen, lightly defrosted)
a handful of chives, finely chopped
1 and a half tbsp natural yoghurt
METHOD:
Peel and boil potatoes, allow to cool and mash
add corn and peas and mash slightly
add chives and yoghurt and mix together until combined
Place spoonfuls onto a baking tray and bake at 180 degrees for approximately 15 minutes or until golden.
