This is a nice quick and easy recipe perfect for that lunch time rush. Cooked very similar to a normal omelette but packed with a few more veggies for healthy little tummies.
INGREDIENTS:
1 small carott
1/4 small zucchini
1 egg
1/2 small onion
METHOD:
dice onion and brown in a pan
peel and grate zucchini and squeeze out excess liquid
peel and grate carrot
add peeled veggies to onion and cook until soft
in a separate bowl, whisk an egg
add veggies to egg and whisk together
return to pan and cook until egg cooked through
This was a dairy free recipe for us but would be delicious with some parmesan cheese melted through at the end. You can also add different veggies such as potato, capsicum or fresh tomato (just ensure you are removing excess liquid from watery vegetables like potato). You could even add a little ham for extra flavour.
