These delicious, fluffy pancakes are a great option for the whole family. And a yummy treat for baby. I made this recipe as babies first taste of pancakes and they were very well received! I wanted to make sure I kept the sugar low and made them nice and fluffy so they were easy for my 9 month old to eat.
INGREDIENTS:
1 Cup Plain Flour
1 Cup Self Raising Flour
1/4 Cup Caster Sugar
3 Tsp Baking Powder
1 Tsp Bicarb Soda
Pinch of Salt
1 1/2 Cups of Milk of your choice
1 tbs Melted Butter or Margarine
1 Egg
2 tsp Vanilla Essence
METHOD:
Combine flours, sugar, baking powder, bicarb soda and salt in a bowl
Make a well in the center and add milk, melted butter and egg
Whisk wet ingredients together with a fork and slowly combine with dry ingredients
Heat a non stick pan and use approx 1/4 cup of batter per pancake.
Cook until golden brown on both sides.
NB: If you prefer, you can leave the sugar out of this recipe! This is the first time I've ever added sugar to a recipe for bub and added a little less than I've recommended above.
You can top pancakes with your choice of topping. Jam, Maple Syrup, Honey (if baby is old enough. Do not use honey is baby is under 12 months) or fresh fruit. Yesterday we topped ours with some fruit and baby porridge.
I used 1 strawberry puree cube and a pear cube, defrosted them and added them with a tbs of Rafferty's Garden Banana and Apricot wholegrain cereal to make a 'spread' for the top of the pancake. It was a huge hit!
