Super Speedy Spinach and Pumpkin Pasta

Healthy meals that are quick to prepare and cook are always a bonus when it comes to feeding little ones. This easy pasta dish can be ready in just 20 minutes, and it doesn't require a lot of effort!



INGREDIENTS:

  • 1/4 small pumpkin (I used butternut pumpkin but any would work)

  • 10 fresh spinach leaves

  • olive oil

  • pasta of your choice (I used alphabet corn pasta)

METHOD:

  1. Finely chop pumpkin and spinach

  2. fry pumpkin in pan with olive oil until soft

  3. add spinach and sautee' for 2 minutes

  4. in a separate pan, boil your pasta

  5. drain pasta when cooked and mix with pumpkin and spinach

  6. you can also sprinkle some parmesan cheese once cooked for extra flavour

NB: if you do not have fresh spinach you could also use frozen.
