Tasty and easy tuna patties your little ones will love! These are also dairy free and egg free!
INGREDIENTS:
1 Cup cooled or left over mash potato
1 Tin of Tuna (95g)
1 Small Handful of Breadcrumbs (Approximately 1/4 cup)
1 tsp Salt Reduced Chicken Stock
1 Small Bunch of Parsley, Finely Chopped
Olive oil for frying
METHOD:
For this recipe I used left over mashed potato from the night before. If you are using a fresh batch of mash potato, do this early and allow them to cool. I used dairy free spread and oat milk to make ours dairy free.
Once potatoes have cooled, place in a large bowl and add your breadcrumbs, stock and parsley and mix together
Break up any chunks of tuna until nice and flakey and add to potato mix. Mix well until combined.
Heat oil in pan
Form potato mix into patties using your hands or a spoon and place in oil
Fry until golden on each side.
