Being Italian, pasta sauce is a regular in our household. Little man will often share the traditional sauce we eat but I do like to add in some extra veggies when I make his sauce. You really can add such a vast variety of veggies when making a pasta sauce but this one turned out quite delicious and was thoroughly enjoyed by the little man.
INGREDIENTS:
2x medium carrots
10 leaves fresh spinach (you can substitute with frozen)
1 medium mushroom
1/4 zucchini
1 medium tomato
1x onion
1/4 tsp salt reduced chicken stock
100g beef mince
1 tsp tomato paste
1 bottle tomato passata (approx 500g)
3 tbsp olive oil
METHOD:
Finely chop onion.
Heat oil in pan and add onion, cooking until transparent
Grate carrot, mushroom, zucchini and tomato and finely chop spinach
Add veggies to pan and allow to cook down until soft and aromatic
Add tomato paste and cook for another 2 minutes
Add mince and cook until browned
Add your tomato passata and chicken stock and bring to the boil.
Lower heat and allow to simmer with lid on for at least 1 hour.
Boil pasta of your choice and add to sauce
