A delicious, easy and healthy treat for your little ones. These were so simple to make and are packed with goodness. A super quick recipe and great for on the go little snacks.
This recipe is an adaptation from a few different recipes I have seen and I loved the idea of a weet-bix snack so I decided to give my own version a go.
INGREDIENTS:
6 kids Weet-Bix
16 pitted dates
1/2 cup desiccated coconut
1 tbs of Mayvers super spread
3-6 tbs water (as needed)
METHOD:
Crush weet-bix and place in blender
Add dates, super spread, coconut and 3 tbs water and blitz together.
Add water as needed, until mixture is firm enough to roll into balls.
Using the palm of your hand, roll the mix into balls of you choice of size.
Place in an airtight container and refrigerate for up to 1 week.
Notes:
You can add different types of fruits and nuts to the mix. Sultanas, dried cranberries or chopped dried apricots would work well.
You can also replace the super spread with peanut butter but use less as the super spread is much runnier than peanut butter.
Honey would also work (only a tbs or so) but only if your child is over 12 months.
These can be stored in the freezer for up to 3 months.
