For tonight's dinner I decided to experiment and make a yummy zucchini slice! My son has always really enjoyed Zucchini, I usually add it in all of his puree's but he has recently been showing much more interest in feeding himself. He can't quite use a spoon yet so it makes puree' foods a little difficult. We have started offering puree'/mash first and then providing him with a little plate of 'finger foods' for him to hold and practice feeding himself, which he loves! So for tonight's menu, I'm going to forgo the puree' and offer a zucchini slice instead.
I like to try and pack a few different veggie option into my meals so although I call this a zucchini slice, it is filled with other yummy veggies too :)
Ingredients:
1 large zucchini
2-3 carrots (mine were quite small so I used 3)
1 potato
1 small sweet potato
1 onion
3 eggs
1/4 cup plain flour
1/4 cup self-raising flour
handful of Parmesan cheese (can leave this out if you want it to be dairy free)
1/2 tsp salt reduced chicken stock powder (can also use vegetable stock)
pinch of nutmeg
pinch of garlic powder
Method:
Pre-heat oven to 180 degrees and line a slice pan with baking paper
Wash and grate zucchini and allow to sit in a colander to drain. I place a heavy bowl on top to help squeeze out extra water.
Peel, wash and grate your remaining vegetables (carrot, sweet potato, potato and onion) and mix together with zucchini.
Transfer vegetables to a pan and cook on medium heat until soft. Add your garlic powder, stock and nutmeg to the vegetables whilst cooking.
remove from heat and transfer back to bowl. Allow to cool a little.
In a separate bowl, beat your eggs.
Add your flour to the vegetable mix and then mix in egg until well combined.
Grate in parmesan cheese and mix well.
Transfer to prepared slice pan and pop in oven at 180 degrees for approximately 20 minutes.
Once your slice is golden brown on top remove from oven and allow to cool.
Once cool, you can remove from tray and cut up into desired sized slices for your little one.
NB: cooking time is approximate and will vary based on your oven and thickness of your slice. My slice was quite thin as I used a bigger tray. Make sure you check regularly so it doesn't dry out of burn.
My slice had just finished cooking at the end of my sons lunch so I grabbed a bit for him to try (hence the slice missing in my photo) and he loved it! It is quite soft so was easy for him to chew (he doesn't have any teeth yet) and was a perfect size and shape for him to hold.
This was a big hit for my little girl. She loved it! Recipe is simple and makes enough to freeze. My partner and I even had a slice for our dinner with a nice salad. Thank you Lisa.
